From 365 Ways to Cook Pasta. I'd be tempted to try this with Israeli couscous. Ingredients:
1 cup couscous |
1 1/2 cups boiling water |
1/4 cup finely chopped carrot |
1/4 cup finely chopped celery |
1/4 cup finely chopped green pepper |
2 tablespoons finely chopped scallions |
2 tablespoons finely chopped parsley |
6 tablespoons olive oil |
2 tablespoons lemon juice |
1 garlic clove, crushed |
1/2 teaspoon salt |
black pepper |
Directions:
1. Place the couscous in a medium bowl; add the boiling water; cover and let stand until all the water is absorbed and mixture has cooled slightly, about 20 minutes. 2. Add the finely chopped vegetables. 3. In a small bowl, whisk the oil, lemon juice, garlic, salt and pepper. Add to the salad. Toss to blend. |
