~Something to use up this seasons bumper crop of Zucchini~
Ingredients:
3 cups cornmeal
1/2 cup flour
2 teaspoons fresh baking powder
1 teaspoon salt
1-1/2 cups cottage cheese
1-1/2 cups milk
1 cup butter,melted
4 fresh eggs
1 cup zucchini,finely chopped
1 cup onion,finely chopped
Directions:
1. In bowl stir together,cornmeal flour,baking powder,salt.
2. In another bowl,whisk together,cottage cheese,milk,butter,eggs.
3. Stir in the zucchini,and onion.
4. Add this to the dry ingredients,and stir only until moistened.
5. Pour into two greased,8 square pans.
6. Bake in a 375 degree oven for 25 to 30 minutes(or)until golden brown.
7. ~Serve Warm~
