Summer Brushcetta Bread

when you have all those tomatoes coming in......this is a very tasty way to use them up!
Ingredients:
12 heirloom tomatoes (any nice ripe ones will do)
1 clove garlic (minced)
sea salt
fresh black pepper
high quality olive oil
1 whole wheat baguette (day old) sliced length wise
as much fresh basil as you like (i like lots)
fresh parmigiano regiano
Directions:
1. slice tomatoes in half then the halves in quarters
2. add garlic, salt and pepper to taste and drizzle with olive oil
3. mix to coat and spread on a large cookie sheet
4. cook in oven at 225 degrees for 2 hours or until carmelized
5. remove from oven
6. take baguette lengths and spread basil ontop ( I love basil so I use a lot)
7. layer still warm tomatoes on top of basil leaves
8. heat inlow oven ...about 225 for 20 minutes
9. remove from oven
10. take a potato peeler and grate cheese in slices (again be generous)
11. drizzle with olive oil
12. salt and pepper to taste.
13. cut into fairly thick pieces
14. I sometimes grill the bread first if we are bbqing....adds a nice flavour!
