This is a great summer dessert Ingredients:
1 cup flour |
1 stick butter, softened |
1/4 cup dark brown sugar, packed |
1 cup pecans, chopped |
1 8 oz.pkg. cream cheese, softened |
1 8 oz. container cool whip, do not substitute |
1 cup sugar, divided |
1 tsp. vanilla |
1 quart berries (blueberries, raspberries, blackberries or any combo you like |
2-2 1/2 tsp. cornstarch |
water |
Directions:
1. Preheat oven to 350 2. In mixing bowl, combine flour, butter, dark brown sugar and pecans, mix well Press into bottom of 9x13x2 baking dish 3. Bake 15-20 minutes until slightly brown 4. Remove from oven and cool on cooling rack 5. In mixing bowl, blend together cream cheese, Cool Whip, 3/4 cup sugar, and vanilla 6. Spread over crust and refrigerate 7. In saucepan, add berries, cornstarch, and 1/4 cup sugar, and just enough water to moisten 8. Over medium heat, stir constantly until thickened 9. Remove from heat and cool 10. Spread over cream cheese layer 11. Refrigerate until served |
