A great accompaniment to Middle Eastern type sandwiches. Sumac can be purchased ground, or as whole berries you can grind yourself. It can be found at Middle Eastern groceries, and sometimes at well-stocked regular grocery stores. If you can't find sumac in your area, you can substitute with a little bit of paprika, cayenne and lemon juice instead. From It's All American Food by David Rosengarten. Ingredients:
2 large sweet onions |
1 1/2 teaspoons ground sumac |
Directions:
1. Peel and slice the onions as thinly as you possibly can (paper-thin would be great here, if you can manage it). 2. Toss the onions with the sumac (or the paprika, cayenne and lemon juice, if using). 3. Serve as a condiment on any Middle Eastern type sandwich (such as kebab). |
