Serve over brown rice Ingredients:
1 lb sirloin steak, about 2 thick |
1 medium sweet onion, thinly sliced |
2 green peppers, seeded and cut in thin strips |
3 celery stalks, cut in diagonal slices |
1/2 lb mushrooms, sliced |
1 cup scallions (about 2 bunches), trimmed and cut into 2 pieces |
1 lb collard greens, stems removed and roughly chopped |
14 oz bamboo shoots, drained and sliced |
10 1/2 oz beef broth |
1/2 cup soy sauce |
2 tablespoons splenda |
Directions:
1. Cut steak across grain into 1/8-1/16 slices 2. Prepare onion, green pepper, & celery 3. Lightly brown meat in a large non-stick pan/wok 4. Add onion, green pepper, celery, & about half the broth mixture - stir often & cook for about 5 minutes; add broth as needed (okay to put it all in at once) 5. Stir in mushrooms, scallions, & bamboo shoots 6. Add collards & cinch down lid while vegetables cook down 7. Prepare rice while letting sukiyaki simmer about 30-40 minutes |
