Adapted from an old cookbook. Ingredients:
1 1/2 lbs beef (i use sirloin steaks) |
2 tablespoons peanut oil |
1/2 cup beef broth |
3 tablespoons sugar |
1/2 cup soy sauce |
10 green onions, cut into 2 inch pieces |
1 1/2 cups celery, sliced |
8 ounces bamboo shoots |
3 cups rice, cooked |
Directions:
1. Reduce beef stock by half while preparing meat and vegetables. 2. Pound the beef to tenderize, then cut into strips about 2 inches long and 1/2 inch wide. 3. In a large skillet or wok, brown meat in oil. Add sugar and soy sauce to reduced beef broth. Pour into skillet or wok over browned meat. Push meat aside and add vegetables. Cover and simmer 15 minutes. 4. Serve with rice. |
