This is a hit with the kids. Instead of gum drops, you can use jelly beans or other soft chewy candies. My son took two of these to a bake sale at school and sold them by the slice. I found this recipe in Gold Medal Flour holiday baking cookbook.Cook time includes 45 min of cooling time. Ingredients:
1/2 cup packed brown sugar |
1/4 cup granulated sugar |
1/2 cup butter or 1/2 cup margarine, softened |
1 teaspoon vanilla |
1 egg |
1 1/4 cups all-purpose flour |
1/2 teaspoon baking soda |
1 1/2 cups small gumdrops, cut in half |
1/2 cup white chocolate chips |
1 teaspoon shortening |
Directions:
1. Heat oven to 350ยบ Mix sugars, butter, vanilla and egg in large bowl with spoon. 2. Stir in flour and baking soda (dough will be stiff) Spread or pat dough in ungreased 12 inch pizza pan or in 12 inch circle on ungreased cookie sheet Bake 10 minutes. 3. Sprinkle gumdrops over partially baked crust. 4. Bake about 5 minutes longer or until curst is golden brown; cool in pan 30 minutes. 5. Melt baking chips and shortening in small heavy saucepan over low heat, stirring frequently. 6. Drizzle over cookie and let stand 15 to 20 minutes or until set. 7. To serve, cut into wedges. |
