Sugarless Fruitnut Muffins

These tasty muffins are made without the benefit of sugar or artificial sweeteners and they taste pretty good to boot!
Ingredients:
1 cup chopped dates
1/2 cup raisins
1/2 cup chopped prunes
1 cup water
1/2 cup butter or margarine
1/4 tsp salt
2 eggs, beaten
1 tsp vanilla extract
1 cup flour-- half white/half whole wheat
1 tsp baking soda
1/2 cup chopped nuts
Directions:
1. In a saucepan combine dates, raisins, prunes and water.
2. Bring to boil and boil 5 minutes.
3. Stir in margarine and salt.
4. Set aside to cool.
5. Add remaining ingredients to fruit.
6. Stir just until dry ingredients are moistened.
7. Spoon in greased mini-muffin pans
8. Bake at 350 degrees for 15 mins.
9. (If desired, bake in a 22 x 7 x 2 baking pan for 30 mins)
10. Diabetic exchanges: one muffin equals 1/2 fruit; 1 fat; 1/2 starch
11. 94 calories; 52 mg sodium; 14 mg cholesterol; 12 gm carb; 2 gm protein; 4 gm fat.
