Sugarless Applesauce Cake |

Agreat cake for the dibetic and for poeple who want a sweet desert with no sugar. Ingredients:
1 cup water |
i cup raisins softened |
1 cup diced dried fruit |
2 cups all-purpose flour |
sugar substitute equivalent to 1 cup sugar |
1 1/2 tsp.. ground cinnamon |
1 tsp. baking soda |
1/2 tsp. salt |
1/2 tsp. ground nutmeg |
2 eggs or egg substitute equivalent |
1 cup unsweetened apple sauce |
1/2 cup vegetable oil |
1 tsp. vanilla extract |
1/2 cup chopped nuts |
Directions:
1. In a saucepan, bring water to a boil. Add raisins and dried fruit, then remove from heat. Let stand for 10 minutes: drain well and set aside. In a bowl, combine, the flour, sugar substitute, cinnamon, baking soda, salt and nutmeg. In another bowl, combine the eggsubstitute, applesauce, oil, and vanilla until blended. Stir into the dry ingredients until well blended. Fold in nuts and reserved fruit. pour into a 10 fluted tube pan coated with nonstick cooking spray. Bake at 325 for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes before removing to a wire rack. |
