I also received a Blue Ribbon on these today at the 4-H County Fair. Don't over bake these. Ingredients:
3/4 cup chopped dates |
1/2 cup finely chopped peeled apple |
1/2 cup raisins |
1/2 cup water |
1 cup all-purpose flour, plus |
1 tablespoon all-purpose flour |
1 teaspoon ground cinnamon |
1 teaspoon baking soda |
2 eggs |
1 teaspoon liquid artificial sweetener |
Directions:
1. In a large saucepan, combine dates, apple, raisins and water. 2. Bring to a boil; reduce heat and simmer for 3 minutes. 3. Remove from heat and cool. 4. Combine flour, cinnamon and baking soda. 5. Stir into apple mixture and mix well. 6. Combine eggs and sweetener; add to batter and mix well. 7. Drop by tablespoonfuls onto a nonstick baking sheet. 8. Bake at 350 degrees for 10 minutes. |
