Sugarfree Vanilla Spice Custard |

Stevia-sweetened, egg free but still sinfully delicious, this makes an awesome finish to a meal or a snack curled up in front of the fire. Makes about 1/2 cup per serving. Ingredients:
2 tbsp cornstarch |
1/4 teaspoon cinnamon |
pinch salt |
1/2 cup skim milk |
1 cup water, divided |
1/2 tsp vanilla |
1/2 tbsp stevia powder |
Directions:
1. Combine cornstarch, cinnamon, salt and 3 tbsp water. Mix it into a paste, set aside. 2. Heat milk and remaining water together in a saucepan. 3. Add the cornstarch mixture to the saucepan and bring to a brisk simmer. 4. Reduce heat to low and cook, stirring, until it thickens slightly. 5. Remove from heat. Add vanilla and Stevia, stirring well. 6. Cool in individual bowls before serving. |
