Sugared Lime and Mango Cheeks |

lightly grilled or barbequed mango cheeks - serve as a side to a main or as a sweet treat. Can be cooked indoors on a grill plate or babrbequed. Ingredients:
2 mangoes (firm ripe mango works best) |
1 tablespoon grated lime rind |
1 tablespoon lime juice |
4 teaspoons brown sugar |
Directions:
1. Slice the cheeks from the two mangos. To do this you cut from top to bottom of the mango, feeling for the seed and slicing around it. Remove the cheeks as close to the seed as possible. Leave the skin on. 2. Lay the mango cheeks, skin side down onto a large plate. 3. Drizzle over the lime juice, graed lime rind and then sprinkle over the brown sugar. 4. Cook on a grill, flesh side down, until lightly browned. |
