These cookies will just melt in your mouth. They are so mild and delicate that they make a prefect side for tea. Ingredients:
1/3 cup butter, softened |
1/2 cup sugar |
1 lemon, zest of |
1 egg, beaten |
4 tablespoons lemon juice |
3 cups all-purpose flour |
1 teaspoon baking powder |
1 tablespoon milk |
confectioners' sugar, for dusting |
Directions:
1. Preheat oven to 325°F. 2. Lightly grease several cookie sheets. 3. In a mixing bowl, cream together the butter, sugar, and lemon rind until pale and fluffy 4. Add the beaten egg and lemon juice a little at a time, beating well after each addition 5. Sift the flour and the baking powder into the creamed mixture and blend together. 6. Add the milk and mix to form a soft dough 7. Pour the dough onto a lightly floured surface and divide into 5 equal pieces 8. Roll each piece into a tube and shape into an S shape 9. Place on the prepared cookie sheet and bake for 15-20 minutes. 10. Let cool on a wire rack. 11. Heavily dust with confectioner's sugar. |
