One of my favorites. Brings out the sweetness of the asparagus. Ingredients:
3 tablespoons butter or 3 tablespoons margarine |
2 tablespoons brown sugar |
2 lbs fresh asparagus, cut into 2-inch pieces (about 4 cups) |
1 cup chicken broth |
Directions:
1. In a skillet over medium-high heat, melt butter and brown sugar until sugar is dissolved. 2. Add asparagus; saute for 2 minutes. 3. Stir in chicken broth; bring to a boil. 4. Reduce heat; cover and simmer for 8-10 minutes or until asparagus is crisp-tender. 5. Remove asparagus to a serving dish and keep warm. 6. Cook sauce, uncovered, until reduced by half. 7. Pour sauce over warmed asparagus and serve immediately. |
