Sugar-Topped Applesauce Muffins |

My five brothers, two sisters and I grew up on a farm and built up hearty appetites doing various chores. It seemed no matter what I helped Mom cook was gobbled up. That encouraged me to spend more time in the kitchen! Ingredients:
2 cups biscuit/baking mix |
1/4 cup sugar |
1 teaspoon ground cinnamon |
1 egg |
1/2 cup applesauce |
1/4 cup milk |
2 tablespoons vegetable oil |
topping: |
1/4 cup sugar |
1/4 teaspoon ground cinnamon |
2 tablespoons butter, melted |
Directions:
1. In a bowl, combine the biscuit mix, sugar and cinnamon. In another bowl, beat the egg, applesauce, milk and oil. Stir into dry ingredients just until moistened. 2. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 10-12 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. 3. In a small bowl, combine sugar and cinnamon. Dip muffin tops in melted butter, then in cinnamon-sugar. Yield: 1 dozen. |
