An impressive dessert for company in early spring when the maple sap begins to flow. Ingredients:
1 1/2 c maple syrup |
4 egg whites |
1/2 c superfine or powdered sugar |
2 tsp baking powder |
4 tbsp cognac or pure apple juice |
1 tbsp butter (no substitutes) |
Directions:
1. Preheat oven to 300F 2. Boil 1 cup of the syrup until it makes 3/4 cup, let cool slightly. 3. Beat egg whites until stiff. 4. Add the sugar and baking powder, carefully blend in the reduced syrup. 5. Divide the remaining 1/2 cup syrup amongst 6 ramekins, divide and add cognac and butter to each. 6. Slowly pour in the egg mixture. 7. Place ramekins in a pan containing a water bath. 8. Bake 50 minutes, serve hot. |
