I stayed at the Sugar Hill Inn located in New Hampshire and was treated to these gems during breakfast in the morning. These muffins have a great texture with a soft crumb and just melt in your mouth. These are best served warm with butter. Enjoy!
Ingredients:
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, at room temperature
3/4 cup maple syrup
1 cup sour cream
1 egg
1 cup raisins
Directions:
1. Preheat oven to 400 degrees.
2. Butter standard muffin tins.
3. In a small bowl, stir and toss the flour, baking powder, baking soda, and salt. Set aside.
4. In a medium bowl, beat the butter until smooth then slowly add the maple syrup, beating constantly.
5. Beat in the sour cream and egg.
6. Fold in the raisins.
7. Add the dry ingredients to the wet ingredients, and stir until just blended.
8. Spoon mixture into the prepared muffin tins, filling each cup about two-thirds full.
9. Bake until a toothpick inserted in the center comes out clean, about 15 - 18 minutes.
10. Cool in the tin for 5 minutes, then remove.
