SUGAR GLAZED WALNUTS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hansen Estate in Crandall, Texas in 1994.
Ingredients:
4 egg whites
1/2 cup sherry
2 cups sugar
2 teaspoons salt
2 teaspoons ground cinnamon
1 teaspoon ground ginger
8 cups walnut halves
Directions:
1. Preheat oven to 250.
2. Spray two baking pans with nonstick coating spray.
3. In large bowl whisk egg whites until beaten then add champagne, sugar and salt.
4. Whisk until blended.
5. Add spices and nuts stirring until coated then spread on baking pans.
6. Bake at 250 for 1 hour stirring occasionally to prevent sticking.
7. Remove from pans at once and cool on wax paper lined racks.
8. Separate walnuts into a single layer with two forks.
9. Store at room temperature in airtight container.
