This healthy snack is not just for diabetics. It's a nice light snack for everyone. I made them for my 4-H project that I took in today to the county fair. I received a Blue Ribbon on them. Make sure you use an artificial sweetener recommended for baking. Ingredients:
1 cup raisins |
1/2 cup water |
1/4 cup margarine |
1 teaspoon cinnamon |
1/2 teaspoon ground nutmeg |
1 cup all-purpose flour |
1 large egg, lightly beaten |
3/4 cup unsweetened applesauce |
artificial sweetener, equivalent to 1 tablespoon sugar |
1 teaspoon baking soda |
1/4 teaspoon vanilla extract |
Directions:
1. In a saucepan over medium heat, cook raisins, water, margarine, cinnamon and nutmeg until margarine is melted; continue cooking for 3 minutes. 2. Cool. 3. Add all remaining ingredients and mix well. 4. Spread into an 8-inch square pan coated with nonstick cooking spray. 5. Bake at 350° for 20-25 minutes or until lightly browned. |
