I have spent years looking for good sugar free recipes - this is one of them. Ingredients:
1/2 cup shortening |
3 tablespoons sugar substitute with aspartame (such as equal packets) |
1 egg |
2 1/2 cups cake flour |
1/2 teaspoon salt |
2 teaspoons baking powder |
1/2 cup skim milk |
2 tablespoons water |
1 teaspoon vanilla extract |
Directions:
1. Cream shortening, add sugar substitute and egg; beat well. In a separate bowl, combine dry ingredients, add the milk, vanilla, and water. Put in flour mixture and stir well. 2. Chill dough 2 to 4 hours. 3. Preheat oven to 325 degrees F (165 degrees C). 4. Roll out 1/8 inch thick and cut the cookies. Bake for 8 to 10 mins. Cool. Keep in air tight container. |
