Sugar Free Carrot Salad

My dad is a diabetic and this is his one of his favorites. It is very tasty and satisfying even to the non-diabetic.
Ingredients:
1 (20 ounce) can crushed pineapple, packed in its own juice
2 (3 ounce) boxes sugar-free orange gelatin
1 1/2 stalks celery, finely chopped
2 -3 carrots, peeled and grated
Directions:
1. Make jello according to directions on the box.
2. Chill until slightly thickened.
3. Drain pineapple and add to the jello along with the grated carrots and chopped celery.
4. Mix together and chill until firm.
