Sugar Free Banana Prune Bread |

i adapted the recipe from a Splenda cookbook: nice moist flavorful dark banana bread. prunes keep this moist and lower in fat! I used all purpose flour, soured skim milk. Nuts can be an option Loaves baked up nice and high Ingredients:
3 ripe bananas |
2 heaping tbs prune lekvar or prune puree |
2 cups flour, may be part whole wheat |
3/4 to 1 cup splenda for baking |
1 tsp baking soda |
1/2 tsp baking powder |
1 egg |
1/4 cup buttermilk ( i used skim milk with a tsp vinegar ) |
2 tsp vanilla |
4 tbs oil or melted margarine |
Directions:
1. mash bananans and prunes 2. sift dry ingredients together 3. Combine wet ingredients together 4. beat all mixtures on med speed with an electric mixer till well blended 5. Place in a paper lined greased loaf pan 6. Bake in a 350F oven for 35 to 45 minutes OR tested done in center with toothpick 7. Cool and remove from pan 8. Wrap in foil overnight to mellow flavors- may be frozen See Photo |
