Sugar Free Baked Ricotta Custard (South Beach Diet friendly)
Ingredients:
3/4 cup part-skim ricotta cheese
4 ounces fat free cream cheese, room temperature
1/2 cup sugar substitute
1 large egg
1 large egg white
1/4 cup fat-free half-and-half
1/4 teaspoon vanilla extract
1 dash ground cinnamon
Directions:
1. Preheat oven to 250 degrees.
2. Mix ricotta and cream cheese until creamy.
3. Add sugar substitute, eggs, half-and-half, and vanilla.
4. Beat until well blended.
5. Transfer into ramekins.
6. Place into larger baking dish and add hot water to depth of 1 inch.
7. Bake until set (approx 45 mins).
8. Remove and cool.
9. Serve chiled or at room temperature.
10. Sprinkle with cinnamon.
