Use the ripest bananas you can for this cake. All of the mixing for this cake must be done by hand with a wooden spoon. Ingredients:
1 teaspoon baking powder |
1 teaspoon baking soda |
1/2 teaspoon salt |
1 1/2 cups granulated sugar |
1/2 cup butter flavor shortening (i like crisco) |
2 eggs |
1 tablespoon vanilla |
3/4 cup milk |
4 bananas, smashed (the riper the bananas, the better) |
2 cups all-purpose flour |
confectioners' sugar, for dusting |
Directions:
1. Grease and flour a 9-inch by 11-inch baking pan. 2. Preheat the oven to 375 degrees F. 3. All mixing must be done by hand with a wooden spoon. 4. In a small bowl, mix all the dry ingredients except flour and granulated sugar. 5. In a large mixing bowl, cream the granulated sugar and shortening. 6. Add the dry ingredients (not the flour), the eggs, vanilla, and milk to the sugar and shortening mixture. 7. Mix thoroughly. 8. Add the smashed bananas and mix. 9. Add the flour, continuing to mix. 10. Pour in the batter and bake at 375°F for 25 minutes or until a knife through the center of the cake comes out dry. 11. Cover with confectioners' sugar. 12. Let cool and cover again with confectioners' sugar. |
