Sugar Crusted Apricot Chews |

These squares have a very moist cake like texture with a sugary crust ...good stuff Ingredients:
1/2c finely chopped dried apricots |
1/2c raisins |
1/3c water |
1c all purpose flour |
1tsp baking powder |
1/4tsp baking soda |
1/2c chopped walnuts or pecans |
1/2c crushed pineapple, well drained |
2 eggs |
1t lemon juice |
1c sugar |
extra sugar for coating |
Directions:
1. Cook the apricots and raisins in water 8-10 mins. or until tender; drain well. 2. Combine flour with baking powder and baking soda. Add walnuts, pineapple and the apricots and raisins to the dry ingredients; stir to coat. 3. Beat the eggs with the lemon juice until foamy. Gradually add sugar, beating until just blended. Fold in the fruit mixture. 4. Spread batter in a greased 9'' square pan. Bake in a 350F oven for 35 mins. or until golden brown. 5. While still warm cut into squares and coat in sugar. |
