These are based on a King Arthur Flour recipe, which I love, but I've slightly adapted them with some whole wheat pastry flour and a couple of minor changes. So good! Ingredients:
1 1/2 cups whole wheat pastry flour |
1 1/2 cups all-purpose flour |
1 1/2 teaspoons baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1 1/4 cups sugar |
1/4 cup reduced-fat cream cheese |
1 cup butter |
1 egg |
1 teaspoon vanilla extract |
Directions:
1. Preheat the oven to 375 degrees and line baking sheets with parchment paper. 2. In a large bowl, combine flours, baking powder and soda, and salt. 3. In another bowl, cream butter, cream cheese, and sugar for 2-3 minutes. 4. Add vanilla and egg to creamed mixture. 5. Add the flour in about 3 batches and mix on low speed until well blended. 6. Make one tablespoon sized cookies on the parchment and bake for about 10 minutes. |
