This is the icing I use on my Rolled Sugar Cookies. I use a stand mixer to make this. Ingredients:
9 large egg whites |
1 1/2 t cream of tartar |
sifted confectioner’s sugar |
Directions:
1. Start mixing the egg whites until slightly foaming. 2. Add cream of tartar. Mix until well blended, but not foaming too much. 3. Add sifted confectioner’s sugar until the consistency of thick Elmer’s glue. 4. Separate if coloring. Use immediately or cover with plastic wrap and refrigerate. 5. Upon cooling icing will thin. Add confectioner’s sugar to thicken for piping. 6. This icing should fold over itself in thin ribbons without immediately dissolving back into the icing in the bowl. |
