Ingredients:
2 1/2 cups buttermilk pancake mix |
2/3 cup water |
1/2 cup sugar |
1/4 cup vegetable oil |
1 large egg |
1/2 teaspoon grated nutmeg |
4 tablespoons butter |
1/2 cup sugar |
2 teaspoons ground cinnamon |
Directions:
1. Preheat oven to 400 degrees. In a medium bowl, stir together pancake mix, water, sugar, vegetable oil, egg and nutmeg until just blended. Spoon batter into a lightly greased, or paper lined, 12 cup muffin pan, filling 2/3 full. Bake for 12-14 minutes, or until a toothpick inserted in center comes out clean. To prepare the topping, melt butter and set aside. In a small bowl, stir together sugar and cinnamon. While muffins are still warm from the oven, dip into melted butter and then into the cinnamon sugar mixture. |
