We've updated this classic with dried cherries and spinach in place of raisins and lettuce. Apples are key, but make sure you use a crisp snacking variety such as the heart-shaped Gala apple with its yellow-orange skin and red stripes. Ingredients:
1/3 cup light mayonnaise |
2 tablespoons peanut butter |
1 teaspoon lemon juice |
2 large gala apples, chopped |
1 celery rib, chopped |
1/4 cup dried cherries, chopped |
1 cup spinach leaves |
1/4 cup pecans, chopped |
Directions:
1. Whisk together first 3 ingredients in a large bowl. Stir in apples, celery, and cherries; toss to coat. Cover and chill 30 minutes. Arrange spinach leaves on serving platter; top with chilled apple mixture, and sprinkle evenly with pecans. |
