From my pal Sue, who got it from someone else, who got it from someone else, and so on. You can use almost any fruit for this, though I prefer apples. Ingredients:
1/2 cup margarine (1/4 lb) |
1 cup sugar |
2 eggs |
1 grated lemon, rind of |
1 tablespoon lemon juice |
1 teaspoon baking powder |
1 cup flour |
fruit, of your choice chopped large |
Directions:
1. Cream margarine and sugar. 2. Add eggs, one at a time. 3. Add the lemon stuff. 4. Add the dry ingredients. Mix well. 5. Grease a 9 round cake pan. Pour in batter. Top with fruit. 6. Bake at 350F for 1 hour. |
