This is a recipe my sister made as a side dish at a summer bbq. It is delicious. *Note* The 30 minute cook time is actually when the cucumbers are draining. Ingredients:
1 cucumber, washed and thinly sliced |
1 pinch salt |
1/2 cup sour cream |
1 cup red onion, diced |
1 tablespoon vinegar |
1/2 teaspoon cumin |
dill or coriander, to taste |
paprika, to taste |
salt, to taste |
pepper |
Directions:
1. Place sliced cucumbers in strainer. 2. Sprinkle Lightly with salt and let drain 30 minutes. 3. Wipe cucumber slices dry. 4. Combine sour cream, onion, vinegar, cumin, and coriander in medium bowl. 5. Toss with cucumber. 6. Sprinkle with paprika, salt, and pepper. 7. Served chilled. |
