Scallop dinner Ingredients:
1 lb scallops, rinsed and dried |
1 tbsp finely minced shallots |
1/8 tsp turmeric |
1 tsp dried fennel |
1/4 tsp ground cumin |
1 tsp minced garlic |
2 tbsp lemon juice |
1/4 cup vegetable broth (low sodium organic) |
Directions:
1. In a large nonstick skillet, heat the brother over high heat. Add scallops to skillet, turning with a wood spoon and cook for 1 minute. Add the shallots, turmeric, fennel, cumin and garlic to the scallops, and cook, turning the scallops until they are golden or light brown (about 3 mins) 2. Add lemon juice just before removing from heat. Serve piping hot. |
