1 large onion, chopped |
3 tablespoons butter |
1 cup corn (fresh or canned) |
1 cup lima beans (fresh or canned) |
2 cups diced potatoes |
1 cup water |
1 teaspoon salt |
1/4 teaspoon pepper |
3 cups milk |
2 tablespoons flour |
1/4 cup water |
1 teaspoon parsley, chopped |
Directions:
1. Sauce onion and butter until slightly browned. 2. Add the vegetables. 3. Add 1 cup water, salt and pepper. 4. Simmer til vegetables are tender. 5. Add milk and heat to boiling. 6. Blend flour with 1/4 cup water to make a smooth paste and add to the soup, cook for one minute while stirring constantly. 7. Garnish servings with chopped parsley. |
