Ingredients:
1/2 tsp olive oil
100 g onion
150 g bell pepper
70 g frozen corn
85 g frozen edamame
1/4 tsp pepper
1/8 tsp salt
Directions:
1. Heat oil in a large saute pan on medium-high. Add onion and pepper and saute for 2 to 3 minutes, stirring frequently, until onion is softened and translucent. Add corn and beans to pan and cook for 3 more minutes, stirring frequently, until warmed. Transfer mixture to a bowl and toss with salt and pepper. Set aside and keep warm.
