A quick tip from Christopher Kimball of _Cook's Illustrated_. Turn inexpensive supermarket balsamic vinegar into a reasonable facsimile of the super-expensive aged stuff. Ingredients:
1/3 cup balsamic vinegar (an inexpensive supermarket brand) |
1 tablespoon white sugar |
1 tablespoon port wine |
Directions:
1. Combine in a small pot. Simmer gently for 30 minutes, until reduced by half. Cool to room temperature before using. |
