I needed to come up with a recipe that could be made really fast and in large quantities for a neighborhood event. It turned out to be a delicious quick dessert for those who love coconut. Ingredients:
8 ounces cream cheese, softened |
12 ounces cool whip |
1 teaspoon coconut extract |
7 ounces coconut flakes |
8 inches prepared graham cracker crusts |
Directions:
1. In a mixing bowl, beat cream cheese and cool whip until thoroughly combined. Add coconut extract and coconut. Mound into pie shell and refrigerate for at least 4 hours. 2. For a decorative touch, sprinkle with toasted coconut. 3. For a more tropical taste, put a layer of lemon or lime curd in the crust before adding the coconut mixture. |
