Stumps Raisin Oatmeal Loaf |

My grandma always called this a 'crumby cake' because it tends to be light and fall apart - though always well worth it! Ingredients:
1c shortening/butter |
1c sugar |
2 eggs |
2c flour |
1tsp baking soda |
3tsp cinnamon |
2/3c milk |
3tsp vanilla |
2c rolled oats |
1c raisins |
1/2c finely chopped nuts |
Directions:
1. Cream shortening/butter and sugar. 2. Add eggs one at a time and beat until thoroughly blended. 3. Sift together: flour, baking soda, and cinnamon. 4. Combine milk and vanilla and add to the creamed mixture alternately with dry ingredients. 5. Stir in oats, raisins,and nuts. 6. Spoon into 2 greased 4 x 7 1/2 loaf pans. 7. Bake at 325 degrees for 1 hour. Turn out pans onto a wire rack. 8. Let stand over night before slicing. |
