Stumps Chocolate Angels Food Cake |

This is the cake my grandma was best known for! A cake fit for a King! Ingredients:
1c sifted cake flour |
1 1/2c sifted powdered sugar |
1/4c cocoa |
1t instant coffee |
1doz egg whites(1 1/2c) |
1/2tsp salt |
1 1/2tsp cream of tartar |
1c granulated sugar |
Directions:
1. Separate whites from yolks while cool and bring them to room temperature before whipping. 2. Sift together the first 4 ingredients and set aside. 3. Whip egg whites 3/4 the way to making peaks( frothy but not stiff ). 4. Add cream of tartar and salt and continue mixing. 5. Slowly pour in sugar and beat slowly until graininess is gone. 6. Fold in dry ingredients in three portions, mixing 15 times after each addition or until moistened/mixed. 7. Do not over mix. 8. Spoon into ungreased angel's food pan. 9. Tap down pan on the countertop to bring up any bubbles before baking. 10. Bake at 375 degrees for 35 to 40 minutes. 11. When done, set upside down in the pan to cool at least an hour before removing from pan. |
