Stuffed Zucchini With Sausage |

This is simple and delicious. I think adding onions and mushrooms would be yummy, too, but I haven't tried it that way yet. Ingredients:
4 zucchini, cut lengthwise and hollowed out. chop up the hollowed out portion |
1/2 lb italian sausage |
1/2 cup romano cheese |
2 tablespoons pine nuts |
2 tablespoons sun-dried tomatoes |
1/2 teaspoon salt |
Directions:
1. Preheat oven to 425. 2. Cook the sausage in a skillet over medium heat, breaking it into small pieces. 3. Add the chopped zucchini and saute for a few minutes. 4. Turn the heat off and add the cheese, pinenuts, and sundried tomatoes. 5. Place the zucchini in a baking dish. 6. Sprinkle the salt over the hollowed out zucchini and fill them with the filling. 7. Bake at 425 for 20 minutes. |
