A whole lot of greatness in this recipe. This is a classic that I have been making for years. Enjoy Ingredients:
4 medium zucchini halved lengthwise |
3 tablespoons butter |
3/4 cup finely minced onions |
3 small cloves garlic |
3 eggs beaten |
1/2 cup crumbled feta cheese |
3/4 cup grated swiss cheese |
2 tablespoons chopped parsley |
1 tablespoon fresh chopped dill |
1-1/2 tablespoons flour |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
1/4 teaspoon paprika |
Directions:
1. Scoop out inside of zucchini to leave 1/2 rim. 2. Chop scooped zucchini into bits and cook in butter with onions and garlic until onions are soft. 3. Combine sautéed ingredients with flour, cheeses, herbs, eggs, salt and pepper. 4. Fill each zucchini with mixture and dust with paprika. 5. Bake at 375 for 30 minutes. |
