Here's one for hunting season! A great way to serve venison, especially good for those who find deer meat a little too gamey. Ingredients:
4 boneless venison steaks |
1 tsp salt |
1/2 tsp pepper |
1 carrot |
1 onion(peeled and thinly sliced) |
2 apples (peeled and thinly sliced) |
1 1/2 cups of red wine |
4 heaping tbs of mashed apple compote |
2 spoonfuls of olive oil |
Directions:
1. FLATTEN THE STEAKS WITH A MEAT-HAMMER. 2. SALT AND PEPPER THEM. 3. GRIND OR GRATE THE CARROT. 4. DIVIDE THE CARROT, THE ONION AND THE APPLES EVENLY OVER THE STEAKS. 5. ROLL THE STEAKS AND SECURE THEM WITH TOOTHPICKS. 6. IN A LARGE FRY PAN, BROWN THEM ON ALL SIDES IN OLIVE OIL. 7. ADD THE MASHED APPLE COMPOTE AND THE RED WINE AND SIMMER THE MEAT SLOWLY FOR 30 MINS OVER A MEDIUM FLAME, 8. REMOVE THE ROLLS AND KEEP WARM IN LOW OVEN. 9. CONTINUE SIMMERING THE SAUCE UNTIL IT THICKENS. 10. POUR IT OVER THE MEAT ROLLS AND IF YOU LIKE, GARNISH IT WITH APPLE SLICES THAT HAVE BEEN SAUTEED IN BUTTER. |
