Stuffed Tomatoes Wfeta

Mediterranean stuffed dish, that is so easy, yet nutritious & delicious.
Ingredients:
6 medium tomatoes, slightly firm
1 cup feta, crumbled
1/2 cup fresh basil, chopped (or dried . may substitute oregano)
1/4 cup olive oil
1 t black pepper
1/2 cup bread crumbs (opt.)
Directions:
1. Preheat oven to 350F
2. Rinse tomatoes & fresh basil
3. Carefully slice top off tomatoes & scoop out inside, leaving nice, sturdy shell.
4. Chopped the tomato pulp (do not drain)
5. Chopped basil ; in a medium bowl, mix pulp , basil, pepper
6. In a bowl, using a fork (or your hands!), crumble feta, leaving chunks.
7. Add feta to pulp mixture
8. Stuff each tomato w/mixture. Do not mash it down.
9. Drizzle tomatoes w/olive oil (approx tsp. per tomato)
10. Sprinkle bread crumbs on tops of tomato, if desired
11. *As feta is salty, I do not add additional salt
12. Place in oven-proof dish & bake at 350F for 20-30 minutes, till tops are golden.
13. Let set for 10 minutes & serve hot or cold, as desired.
