some traditional mediterranean flavors come together in a new ways ! Ingredients:
8 large, firm tomatoes |
6 basil leaves |
2 tablespoons plain yogurt |
1/2 teaspoon lemon / lime juice |
3/4 cup fresh wholewheat bread crumbs |
salt |
pepper |
Directions:
1. Cut off the tope of each tomato and scoop out the pulp, discarding seeds and cores (but save the pulp!!). Place the tomatoes on a rack or plate upside down to drain. Mix together the tomato pulp, basil, yogurt, lemon juice and bread crumbs to make a soft puree, season with salt & pepper. Scoop puree into the empty tomatoes and garnish with a sprig of basil! |
