Tomatoes stuffed with rice, basil, and olives Ingredients:
2 large tomatoes |
2/3 cup cooked white rice |
1/4 cup parmesan cheese |
1/8 cup basil |
Directions:
1. Remove tops of tomatoes, scoop out and reserve the pulp 2. Mix pulp with rice, olives, and torn basil 3. Spoon the stuffing into the tomatoes and top with cheese 4. Eat raw, bake, or broil as desired. |
