easy quick side dish with corn muffin mix and chedder Ingredients:
1 box jiffy corn muffin mix |
6 medium yellow squash |
1/2 cup chopped onions |
1 tsp. salt |
1 tsp. black pepper |
1 cup shredded mild or sharp chedder cheese |
(can also use pepper-jack for spicy twist) |
Directions:
1. Cook squash in boiling water unil tendr (about 12 minutes) 2. Prepare corn muffin mix using box directions 3. Bake muffins,cool 4. Cut squash lengthwise in halves,remove the seeds 5. crumble the corn muffins 6. (5 or 6) 7. Combine in a bowl,crumbled muffins,seasoning,onion,and 1/2 cup cheese 8. Place stuffing mixture into squash halves 9. Bake at 350 for about 10 minutes 10. Remove from oven. 11. Spread remaining cheese on top and put back into oven till cheese melts. 12.
