I loved smoked fish and often get a craving for smoked whitefish I buy the fish already smoked at the gourmet store, carefully remove the bones and make a whitefish salad. Serve with crackers, torn up bread, in a sandwich, filling for tomatoes, wraps etc. Read more .. Possibilities endless. Nobody seems to mind looking at the fish stuffed with head and tail intact! When I serve this to a crowd of fish lovers, the salad literally disappaers in minutes
Ingredients:
1 large already smoked whitefish
quality mayonnaise
chopped celery
chopped red onion
pepper to taste
garnish, loemon slices, tomatoes
Directions:
1. Carefully peel away the skin from the fish.
2. Grab one end of the bone skeleton and carefully pull off, removing any excess bones on the fish
3. In a food processor chop the celery and the onion finely
4. Add the whitefish meat
5. Pulse to chop fish to the consistency you like
6. Add enough mayo to make creamy
7. stir in fresh grated pepper to taste
8. Pack the salad in the fish.
9. Garnish as desired.
10. Serve with crackers, cocktail bread etc
