Red Peppers Stuffed with seasoned ground meat, beans and rice
Ingredients:
3/4 lb lean ground beef
1 onion
7 oz black beans
2 cups brown rice
6 tsp chili powder
2 tsp cayenne pepper
1/2 tsp paprika
2 tsp chopped jalapenos
1/4 cup chedder cheese
8 red peppers
Directions:
1. Brown meat with onion, add spices, rice and jalapenos
2. Remove top of each pepper
3. Fill each pepper with approximately 1/2 cup of meat mixture
4. Shred cheese and divide across top of each pepper
5. Bake at 350 for 30 to 45 minutes or until pepper has begun to soften
6. Cover with foil as needed to prevent cheese from burning
7. Optional: top with fat free sour cream
