I came up with this side, after having alot of spinach dip leftover.........has become a family favourite! Ingredients:
4 large portabello mushrooms |
1/2 cup of spinach dip |
1 cup of your favourite pasta sauce (i use homeade marinara) |
shredded buffalo mozzerella |
grated fresh parmesean or romano cheese |
fresh ground black pepper |
good quality olive oil |
Directions:
1. scoop out the inside of the portabello mushrooms 2. grill in pan on both sides till moisture in mushroom is evaporated (i use a grill pan) 3. remove from pan and layer each mushroom with 1/4 cup spinach dip 4. spoon 1/4 cup marinara sauce on top 5. crumble fresh mozzerella on top 6. drizzle with olive oil 7. bake 350 degrees in shallow pan for 15 to 20 min or untill top is golden and bubbly 8. remove from oven 9. grate parmesean and fresh black pepper on top 10. serve |
