Stuffed Portabello Mushrooms

Ingredients:
4 lbs. portabella mushrooms
2 tbsp olive oil
1 1/2 tomato
1/4 cup parmesan cheese
14 oz can artichoke hearts
1/2 cup light cream cheese
1/4 cup light sour cream
2 tbsp lemon juice
2 garlic cloves
1 tbsp dried basil
1 tsp hot sauce
1 salt and pepper
Directions:
1. Combine all ingredients in a bowl, except for first four ingredients.
2. Preheat oven to 250 degrees ferinheit or 120 degrees celcius.
3. Remove stem and and use a spoon to clean out inside of mushroom. Place mushrooms on baking sheet stem side up. Brush mushroom with olive oil. Stuff the mushrooms with filling. Arrange tomatoes on on top of mushroom and stuffing. Sprinkle with parmesan cheese. Cook for 10-15 minutes, or until desired doneness.
